Gluten Free Empanadas

Preparation 60 min.
Bake time: 30 min.

Ingredients for the filling
1 medium onion finely chopped
1 red pepper finely chopped
1 pound of ground beef
2 chopped boiled eggs
1/2 can chopped olives
Salt, garlic powder, pepper, paprika, and parsley to taste.

Ingredients for the dough
1 cup corn starch
1 cup tapioca starch
1/2 cup milk powder
1 teaspoon xanthan gum
1/2 teaspoon baking powder
3 eggs
4 teaspoon oil of choice
1/4 teaspoon salt
Water if necessary

Filling
Sauté onion and pepper until translucent. Add ground beef and salt, garlic powder, pepper and parsley, as desired. Cook*.
Remove from heat and add chopped boiled eggs and chopped olives. Mix. Set the mixture aside to cool.
* For fried empanadas cook meet to well-done and for oven empanadas cook meet to medium-well.

Dough and final step
Mix together dry ingredients. Add eggs and oil, water if necessary. Dough should be soft but not sticky. Roll out the dough to 1/8-inch thickness and cut in circles.
Note: if the dough breaks, it is possible that more water is needed.
Place filling on each circle. Fold over circle to form a semicircle. Press edges together with a fork.

Fried empanadas: place them in a pot of boiling oil. Fry both sides.
Oven empanadas: place them in a pan. Brush each empanada with egg yolk to add color to the pastry.
Also, you can buy ready-to-use dough for regular empanadas containing gluten.

Empanadas sin glúten

Ingredientes para el relleno
1 cebolla mediana
1 pimiento
1 libra de carne molida
2 huevos duros
1/2 lata de aceitunas picadas
Sal, ajo, pimientón y perejil a gusto

Ingredientes para la masa
125 g. de almidón de maíz
125 g. de fécula de mandioca
50 g. de leche en polvo
10 g. de goma xántica
1/2 cdita. de polvo de hornear
3 huevos
4 cucharadas de aceite
Una pizca de sal
Agua cantidad necesaria

Relleno
Saltear la cebolla y el pimiento hasta dorar. Agregar la carne y sazonar a gusto. Cocinar*, separar del fuego y agregar los huevos duros y las aceitunas. Mezclar.
* Para empandas fritas cocinar la carne en su totalidad y para horno cocinar a la mitad.

Masa y armado
Mezclar todos los ingredientes secos. Agregar los huevos y aceite. Agua en caso de ser necesario.
Debe quedar suave y no pegajosa.
Amasar a 1/8 de espesor y cortar los círculos.
Nota:
Si al amasar la masa se quiebra, es posible que necesite un poco de agua.
Colocar relleno en cada círculo. Cerrar y apretar los bordes con tenedor. Freír o cocinar al horno.
Empanadas al horno: pintar con yema de huevo la superficie para dar presentación dorada.
